Your question is unclear; do you mean how do you test to see if it's detecting viruses ? You could email eicar to yourself.

Another thing is I have set the box to scan everything AV wise but it's not appending the 'Scanned by Draytek UTM' message to emails. Is that a sign it's not scanning?

Yes, I think it should always append it unless you turn the message off.
