Would I be right in saying the only real difference between the 2860 and 2760 is the two extra ethernet ports? I have noticed there seem to be far more people with the 2860 and that means we can also support each other on most issues.

i think here are more users owning business, that is why seems the 2860 is more popular
The 2860 as more expensive unit has a lot different than the 2760 which is also fine for home soho or very small business

as hardware only then yes
-2 extra ethernet ports
-the 2860 plus has an extra antenna in the middle for 5 G (dual band) the 2760 no dual band
-extra incoming wan port ... 2760 not has

but for software here some basic differences
-more vpn tunnels
-SSL VPN
- VPN tranking
-higher firewall throughput up to 200 mbps ... 2760 seems only about 90 mbps
-Load balance ... 2760 not has
- analoge dial up for 3G/4G usb modems - 2760 No

Plus some small other differences i am not remembering right now :o

But how about for basic "how to" questions like "how can I set up port forwarding" and the things you see on here? That must be fairly similar? A lot of it must be?

Most of them are about the same ... at the moment for port forwarding you mentioned with the 2760 needs to go at Network > NAT > Virtual Host, while the 2860 is at usal NAT >> Port Redirection
Other example bind IP to mac is at Network > LAN > Ethernet
Latest firmware has moved back to the original place few features and hopes will do this in future
