I've got a very old 2600 router which I'd like to get syslog information from over WAN. is this possible, please?

It can send syslog messages over the internet, to a specified IP address, though I'm not sure if they support a hostname in there, you could run a syslog server, perhaps running the DrayTek syslog utility, then port forward UDP 514 to that server. The 2600 could then send syslog messages and they should show up on that server.
Alternatively, set up a LAN to LAN VPN with another DrayTek router and point syslog to a PC running on the network across the VPN tunnel, which might be better, because that would encrypt the traffic.
Later models like the Vigor 2860 can store syslog locally via USB or send it via email as well.
