Are the packet aggregation and channel bonding on or off?
Create another SSID that's AS BASIC as it can be (no password/ encryption) on run in B&G mode (No N) and see if the iphones connect then.
If they do they build up the security from there until they break
If it still doesn't work I would put in a support email to Draytek.
I would hate to think the successor for their flagship ADSL router is faulty out of the box

I finally got it working, but it's definitely a strange one.
Firstly I created another SSID in SSID2 with no security, the iOS devices could connect to that fine.
So I then applied security in the form of WPA/WPA2 mixed mode, and they could still connect.
Then I moved this test SSID from SSID2 to SSID1, and they stopped working.
So as a fix at the moment I have two SSID's, one which the Windows Phone's can use and one the iOS devices can use.
Both SSID's are running B&G&N mode with aggregation and bonding switched on.
Thanks for your help sicon, I think I might point Draytek in the direction of this post to see what they make of it!

I have talked to SEG about this issue and they are going to raise it with Draytek apparently.

Update...
Both SSID's became unreliable on both iOS and Windows platforms, so as a temporary fix I have deployed an AP-700 - which works perfectly.
I have not heard anything further from SEG or Draytek regarding this issue.
I am thinking it is not a general 2860n problem otherwise I would have seen more forum posts about it by now, or at least some further replies to this post; maybe they have a duff 2860n.

+1 for exactly the same problem. If you put the device on a static ip it works, it seems like there's a problem passing the dhcp requests through to the wireless.
