Ive just purchased a 2865ax and 3 AP802's to set up a mesh system. I've upgraded the router to the latest firmware but can see no Mesh menu option on the router. Where do I find it? Is it because I have set up a wireless connection on the router already as a temporary solution?

App doesn't see the router and I was basing my setup on the fact the router would also give a wireless signal as well as being the mess root.

Have I been incorrect in my understanding?

Unlike other 2865 models, the specs for the 2865ax do not mention anything about mesh capabilities

It may receive mesh capability with a new firmware sometime in the future, as happened with my 2927ax.

However, even if it did, I fear that you would find that it would not act as a mesh root with anything other than AP906 AP's, as per other "ax" models.

On mine I believe the Mesh menu appeared with the 4.4.2_BT firmware. Can't say whether or how well it works as I don't own any mesh kit.

Ah yes, I see in the release notes for the 4.4.2 firmware "New Features" :-

2. The Vigor2865ax model can act as Mesh Root (With VigorAP 906 nodes only)

BUT as I suspected, it will only do so for the AP906. So, like many of us, you've been sold a pup.
